Jerusalem Artichoke

Helianthus tuberosus

This sunflower has a hairy stem and large leaves, up to 8 inches or more in length, ovate-pointed, on substantial petioles up to several inches long attaching them to the main stem. Near the top of the stem, it branches to support a number of flowers (4-8 inches across) with golden petals and a relatively small disk of darker yellow or brown. The root is a large tuber (hence the Latin name) that is highly nutritious and was cultivated as a foodstuff by Native Americans of the plains.
